Aged Pekin Duck
This incredible Duck is aged in Hay at ‘Sladesdown Farm’ in Devon.
For an easy way to prepare this Duck;
Rub thoroughly with Aynhoe Park Honey
Season with Salt, Pepper and ground Coriander seeds
Place on roasting tray
Cook in a pre -heated oven at 190 C for 8 minutes
Rotate the Duck and cook for a further 6 minutes and the Honey should be well caramelised
Rest for 10 minutes before carving
Confit Duck Legs
They have already been cooked slowly for 8 hours. Requiring only a ‘crisping’ of the skin in a pan until hot.
Giblet Gravy
This is a delicious sauce that is finished with the chopped Duck livers, Hearts, Cabernet Sauvignon and pickled Walnuts
Aynhoe Park Honey
This Honey is made in the Aynhoe X Ledbury Deer Park. The Honey was harvested in Autumn 2019. This is a unique blend of White Clover, Chicory, Chestnut, Birdsfoot Trefoil, Nettle, Yarrow and Elderflower.
