The Whole Double "X" Sirloin has a great coverage of yellow grassy fat on the outside, is dry aged up to 55 days for greater depth of flavour and is ideal to be cut into t bone steaks for the barbecue while still leave a great roasting joint for Sunday Roast or some sirloin steaks.
